The final cookie I included in my Christmas cookie box - coconut macaroons!
Macaroons, not to be confused with macarons, are delicious, bite sized pieces of coconut clouds! If you love coconut, this is definitely a must try, pretty easy recipe! They are chewy on the inside, with a slight crisp on the outside - and, if you love chocolate (well, who doesn't love chocolate) you can dip the bottoms in chocolate and be EXTRA and garnish with chocolate too. There's no such thing as too much chocolate, after all!
I made no tweaks to this recipe, except, of course, add a dash of pyaar ;) Sometimes, that's all you need to do to take a recipe to the next level!
I actually also included these in my Diwali sweet boxes - coconut is one of those flavors often used in Indian desserts as well, kind of like a coconut ladoo!
